INGREDIENTS:

• 2 lbs Russet or Yukon potatoes, boiled and sliced
• ¼ cup Garlic Lemon Salad Dressing
• 1 tbsp your favorite Mediterranean Spice Mix
• 4 Scallions, diced
• ¼ cup of fresh mint, diced

DIRECTIONS:

1) Peel and boil potatoes in salt water until tender, about 25-30 minutes.

2) Drain and rinse potatoes in cold water.

3) Slice potatoes into ½ inch pieces.

4) Let cool for 20-30 minutes.

5) Mix spice mix and salad dressing and coat potatoes.

6) Fold in scallions and fresh mint.
